Kestrel is a small-batch roastery and corner cafe. We source coffees by the harvest, roast them in twelve-pound batches, and pour them the same week — no rush, no shortcuts.
Nine coffees in rotation, each roasted to bring out its own character. Notes are what we taste on the cupping table — not marketing.

Kestrel started in 2014 with a used twelve-kilo drum roaster and a stubborn idea: that a neighborhood deserves coffee roasted this week, not last quarter. We still roast every bag ourselves, a few origins at a time, so nothing sits long enough to go flat.
We buy green coffee from importers we've visited, pay well above market for it, and let each lot tell us how it wants to be roasted. Light enough to taste the farm, never so light it bites. It's careful work — and it's the whole point.
